Welcome back to Hayley Lately. Each Monday, this is where I share some happy moments from the previous week: what I’ve blogged, read, watched and done in beautiful Vancouver.
♥ Summer has arrived. After about eight months of rain and snow, summer has finally made an appearance in Vancouver! I am SO happy to be wearing shorts again and to be seeing blue skies when I wake up in the morning. Sunshine definitely lifts your mood.
♥ Books. I finished reading Maybe in Another Life last week, which is a very good chick lit novel if you are a fan like me. It was a Sliding Doors-style story, which was pretty predictable and sometimes I got confused between the two different timelines. But overall, I’d recommend it. Next up is another Liane Moriarty book, Truly, Madly, Guilty. I’m quite intrigued so far and I’m trying not to read spoilers as I am still clueless about the pivotal moment in the book!
♥ Adventures. I spent my Saturday afternoon/evening with my friend, Beth and her boyfriend, Ben. They’re currently travelling around North America and we had caught up previously in Hawaii and LA, so it was nice to be able to show them my other home. We started the afternoon on Granville Island before walking to Kits Beach and back. This walk has the best views. Then it was onto Olympic Village and the Richmond Night Market for dinner. It was a pretty perfect day in Vancouver.
♥ Eats. At the night market I feasted on satay chicken, pork dumplings and bubble waffle. But on Thursday, we took Beth and Ben to our favourite taco place and then onto ice cream at La Casa Gelato. I recommend trying one of their chocolate-based ice creams. I’ve so far had chocolate macadamia and chocolate fudge brownie, and they were both deliciously smooth!
♥ New post. I’ve been on a roll these past few weeks, producing two posts a week! We’ve gone from LA to Portland to Maui. I wanted to write about my solo travel journey on the Hawaiian island, as I struggled a bit.
♥ In the kitchen. I don’t know if I shared this recipe previously, but if are as addicted to Mexican food as I am, you have to try this Mexican Quinoa dish. It’s currently cooking in the slow cooker, but I add some browned mince (ground beef), onion and garlic to this mixture. It’s the BEST and makes lots of servings.
♥ Currently watching. I am still catching up on Madam Secretary, but I’ve also been watching all of the season finales (so sad). Next on my list is bingeing Unbreakable Kimmy Schmidt, because I only watched about four episodes of the first season. If you have a favourite show, let me know in the comments!
